Don't go by whats on the side wall of the tires. That's the max pressure. The information is in your owners manual and is also on the VIN sticker on the frame. 38 F and 40 R should do fine.

I was mystified by those words on the tyre sidewall, so asked one of the tyre makers. They explained that at 40psi the given weight is the maximum load we should put on them. They are an industry standard and it does not mean that 40psi is the maximum pressure the tyre can be used at, nor does it mean the weight given is the maximum the tyre can safely take. In the case of Avon Venoms max pressure is 50 psi. They also have that notice about 40psi on them.

On my FLHS I use 38F/44R solo and 44F/50R 2-up and fully loaded when touring on my Venoms.

The thing about tire pressure is this. For example on the Avon Venom's you speak of. Those tires might fit a bike that weighs 200 lbs. less than your bike. The tires aren't bike specific, that's why you go by the manufacturers specs. You wouldn't run 50 psi in a 600 pound bike but you might in and 850 pound bike.

Those Venoms are designed expressly for a heavy Harley and have the same load ratings as stock Dunlops. They are however a different design, by definition, and use different compounds etc. The reason I mentioned the pressures I use is to emphasise that 40psi is not the most we can use, which in the case of Venoms is 50psi. Dunlops may have the same 50psi limit, I don't use them and have never asked.
