I have both the Boom bag for the tank and a RAM mount and prefer the RAM mount. Here in Arizona i found that using the bag on the tank to be a bad idea as the iPhone is temperature sensitive and shuts down from the heat coming off the engine along with our high outside temps. The case on my phone snaps on and of easily. I am thinking about the iPod/iPhone interface now offered by HD, but the price is some what of a stickler, $399 plus the cable and bag to mount it in the saddlebag.
Nice set-up, but it looks like the phone would have to be out of any type of protective case to fit in the slot. Would that be correct? I am not going to remove the case ever time I get on the bike.
FYI you also need to remove protective cases for the Ram Mount - which is a pity
I use my iPhone while riding; I keep it in the chest pocket on my tshirt. If I'm wearing a jacket, then I'll keep it in the inside chest pocket of that.
I use the stock white earbuds that come with the iPhone (most of the time), and I can change the volume and the song via the mic/button on the cord, usually ends up just south of my chin. You can feel it through thin gloves, though I do fumble just a little when wearing thick fxrg gloves.
