I'm about 235 in 88 degree weather on the highway (i95 in N. Va traffic stops and goes) - EITMS always on. I agree with 2black1s, I installed a HD parade fan a week ago and the EITMS has not activated since - including about an hour in traffic due to an accident this morning. For me I think it is the solution I needed.
BTW, thanks 2black1s, I purchased The fan after reading your parade fan threads.

Bikes never entered EITMS creeping along for 1 hour in the low 90's with the fans on. Even after stopped for 1 full minute... Just to test I turned my fan off and 3 minutes later....one cylinder. Turned the fan back on and after about 5 minutes or so, back to two cylinders.

There are a lot of skeptics out there regarding the parade fan concept, but in my opinion it's one of the best, and easiest, $300.00 mods you can do to these new bikes - and it is infinitely more effective than the factory EITMS at controlling engine temperatures. It's a "must have" in my book.
I try not to worry about the temps. That's what a warranty is for. I ran HD SYN. I've run 85/95 MPH on freeways for miles. That was in the summer in N.Cali & Nevada with no problems. I'll run Redline in my new bike. Sure it would be better if it was running cooler. But I'm not changing out my pipes,A/C & then put on a tuner that never really works correct. Just my 2 cents

My temps are fine at highway speeds. It's the city driving that drives them up.
The only reasons tuners don't work right , is the people tuning them.
Get a competent Indy Tuner, and your bike will run great.
This topic is of great interest to me. I live in the Phoenix area and in the summer my previous bike (water cooled Kawasaki Nomad) would become nearly unbearable in stop-go traffic. Having just bought a 2011 Ultra Limited two weeks ago, I haven't yet experienced a really hot day, but it is above 100° every day from May through September in this area, with typically 3 weeks above 110°.
I may give the Lenale parade fan some serious consideration.
I couldn't stand the hot air from the fan on my leg. I took it off and now I pull over when I feel the bike has had enough. I do have the HD oil cooler, I'm sure it helps. Usually I have had enough heat at the same time. Let the traffic or what ever calm down, I grab a brew and me and the scooter can cool down.
I see posts on here where guys say they run 230 degrees and lower even in the middle of the summer. That can't be city driving.
I was out today 70+ degrees and just driving around town a lot of stop and go. I'm running straight Dino in my 103 with 1K miles and I was getting a reading of 245. On the highway, I'm below 220. I had the bike tuned by a reputable tuner.
Also do you guys always keep your Engine Temp Mgmt System on, or do you disable it?
same area here i keep the ETMS on but i think that's more for rider comfort than for motor protecting idk,i run dino in my all the bikes i had. add 1 quart of lucas oil treatment that helps so i think it helps,but they run hot in NY NJ traffic even at a long traffic light the sys.comes on.
Went out and played with the bike in the garage today (It's raining)
Found out you can engage and disengage the EITMS on the fly while the engine is running.
Seems some guys have been having trouble with stalling issues with it.
Now I can leave it off, and when I get stuck in traffic, I can just roll it on.

Install an oil cooler (you probably have one on your 103) and Lenale fan. These 2 mods are the reason my 2010 FLHTCU will remain stock. You will be amazed at how much they will reduce your engine oil temperatures in cruise and in traffic.
