Creating mp3 discs

I had no problem creating these before but updated iTunes to 10.5 version. Tried last night and clicked on each song and told it to "create mp3" and before the new version would show up under the original. Seems like I did it with the iTunes downloaded versions and it worked. Now it shows being converted but dont seem to be able to see or find the mp3 version assuming it got created. Any insight?
