I use Non-ethanol premium here, at least in as much as I can find it to limit the alcohol grief BP around here is the only station I know of with ethanol free premium And use it up every few weeks. As for winterizing, I don't do more than service before the cold weather hits then every day the weather has been good and I can get it out I go for a ride. Leather up and take it like a man, what's good for the bike is great for the soul, even a short thirty mile ride is better than sitiing in front of the tube!
