Your bearing races will get grooves in them in the most used areas. Like straight ahead and a little to left and right. If you adjust the bearing snug while pointing straight ahead you will feel the grooves as the bearing rolls out of them with a more severe left and right turn and the steering will bind to some extent.

I just had new tires put on because the bike was grabbing cracks in the road, etc. I asked around and most thought that would do the trick, but it is still grabbing cracks and the steering feels off. Kind of like tracking to the right. Wasn't sure if it was the front springs or what. I'm to the point where I don't know what to do next. I'm not mechanically inclinded, I just ride.

Depends on brand of tire for me. Stock dunlops grabbed bad but the Metz 880 track great. What did you put on it?
I had that issue with my 07 UC with 65K didn't feel comfortable in corners and uneven road surface after adjusting the goose neck few times I had enough, replaced the bearings and every thing else around it rebuilt the front forks and re balance the front tire and finally I can ride it the way I like to ride (aggressively).
