for clutch or throttle cables, I buy a can of cable lube ( green can) with a cable luber attachment, you can shoot the lube right through the cable...I've had the same can for over 30 years.
for hinges etc white lithium greases is handy although i use a clear "teflon" lube from harbor freight ( gray tube)- radio shack used to carry the same stuff. it stays in place even when hot.
I use it at work so I always have some around.
I use hi temp bearing grease on stuff like the old brake linkages on the panhead- it sticks and repels water
whatever you use, apply sparingly, wipe off any excess or overspray
