I enjoyed reading this post, I have a somewhat similiar issue which the builder I used put in a canned map and it runs so rich plugs will foul within a few miles of city riding, runs better at 3k on the freeway.
I am going to throw in another set of plugs and jet the 25 miles today to have it professionally dyno tuned but if I would have seen this thread a couple weeks ago ke5rbd I would have been contacting you also.

I'll second that. He provided me a map for my recent cam build. I've been running it for several months. Recently decided to have the bike dyno'ed just for the hell of it. And tell you what not much of a gain from what he provided.

Just got back everything went perfect. I ended up with a whopping 124/122. On my 103 with MVA heads 10.5:1, 585 cams with supertrapp megashots stepped 2:1:2 headers with 26 discs.
I found out the 50 mm TB is good but hi flo injs are way too much. He had to take out 27-40% fuel. Scarey fast
