There is a website www.vtwinmama.com that could be really helpful to you in deciding. They have a list where women report their height, inseam, and what model they ride and what modifications they needed to make it happen.
I am 5'4" and I have a Heritage Classic. I was able to flatfoot it and ride it just fine as it came off the showroom floor, but I just had it lowered one inch and that's a big help, the added handling is great and I have more confidence in parking, etc. You can lower a bike a couple of inches, you can change the seat out or just shave the seat that comes stock, and there are other tricks. All of them are discussed in depth at that website.
I agree with what was written above -- the Sportster isn't necessarily the best bike to learn to ride on, even though a lot of women get them as their first bike and the dealers sometimes steer you towards them. I know a lot of women who got a Fat Boy as their first bike and it's been all good for them. Go to a dealer and sit on a bunch of 'em. Do your homework before you actually get ready to pull out the checkbook.
And yeah, take a course. It's was well, well worth it.
Now which one will look best pink....... I've seen a coupla pink bikes and I just wouldn't do that to a HD, but that's just my opinon, lol.[X(]
