I have a 2015 Ultra Limited with the 103 now. It is twin cooled obviously.
I was thinking once I get the miles up there, 65k+ I would throw a new motor in there and I was thinking of the 120st. But I know it isn't twin cooled so will I be able to do this? Or will I have to do crazy modifications with the radiators etc
Or will it be a simple swap? Obviously with a bigger clutch, throttle body, exhaust, tuner, intake.

Well put. If you want the power of a 120 engine then why even mess with a 2015 limited. Just pick up a good used bike find a Good builder and do a high powered engine right and be done with it.
65K is just broken in if you don't let the wrong people tell you how to care for your Engine.
