I have a similar seat from Drag Specialities. Did you find that the original seat left marks on your rear fender, and if so, did you make any attempt to remove them? Getting marks off that satin/matt finish is really difficult.
Shields have been powder coated. Finish is very good and matches the black denim paint of the bike. Fitted them and started her up. Left her idling for 10 minutes. Some small amounts of smoke, but I think this might have been from the blue loctite on the screws and PTFE lube on the jubilee clips. Smell of solvent-based paint for sure but they look OK. Will go out for a ride when it stops raining.

There is one small spot but it's hardly noticeable. I just left it alone.
I don’t like the bronze colour of the heat shields on my 2018 Fat Bob and am considering spraying them with VHT paint. I’m worried that it won’t last though and soon look tatty.
Anyone tried this?
You can get them ceramic coated in any colour you want for well under £100 in the UK. I got the full pipe, manifold flanges and all the heatshields done for £160. Look for somebody doing Cerakote in your area. If you can't find anyone, PM me. My guy is in Sussex though.
Cerakote will hold up to as much heat as the bike can throw at it. As you say....VHT paint might not.
