Could you take a rear fender and fender struts from a '19 Fat Bob, mount them on a '19 Slim?
Thinking that would give you room for a wider wheel and a 180 tire while giving you a factory finish.
I think you could mount it up but might run into trouble with getting the seat to match up to the tank and fender. In other words the Slim seat may not match the lines of the Fat Bob fender, definitely would not bolt up to fender without drilling a hole. The Fat Bob seat may or may not match up to the Slim tank, not sure. With a little fab work anything is possible.
I was also looking to swap out my rear fender a couple of months ago. My local HD dealer looked into it and got back to me with it won't fit (different frame) I decided to go with the rick's 200er rear fender kit with seat pan. Definitely happy with the quality!! Before the install I swapped out the shock to lower the bike 2in. The fender brought the backend down even lower. Im very happy with the look, now to find the right rear wheel.

The frames are the same other than the coating (gloss vs matte) and the neck (rake). The struts should interchange. Never ever ever listen to a dealer unless you have a damned good one. I was told by 2 dealers that I couldn't put a 200mm on my 13 FLS. All it took was a crossbones rear wheel, Fatboy 200mm struts, and a spacer behind the rear pulley to clear the belt. Put over 30,000 miles on it with absolutely no issues. Dealers don't always know their stuff.

Im not sure, I remember another thread talking about the 2018 Fatboy frame and 2018 slim frame difference (I believe they listed the specs) the 2018 slim won't except the 2018 Fatboy swing arm (different frame width) ? again, Im not sure though but with the Fatboy stock 240 rear wheel and slim 140 definitely a big difference.

I'm going to explore this with my local dealer further but the SG at first glance sure looks a lot like a Slim in the back with a different fender, struts and wheel. I like the fact that you kept it all factory parts!
