Im new to this audio stuff have questions.
I have a Cerwin Vega b52 amp, my Head unit is Sony Mex-M70BT.
Speakers are Infinity Capa 693.11i.
This system is installed in a aftermarket fairing on My 2012 Roadking.
Question is what do i set the crossover too HP ,Flat or LP.?
and explanation of what these settings do would be greatly appreciated.
Set to HP for high pass frequency prob 80 or above if the gain is set correctly. That will cut out the low frequencies that will kill a speaker not made for it. Flat cuts out no frequencies and is otherwise known as full range. Low pass cuts out high frequencies for subs.

im assuming you have HPF on you Sony HU? i would set the amp to FP (full pass) , and set hpf on your Sony to 80 or 90 hz. much more accurate than the tiny button on the amp

100% this!! Leave amp on all or full pass and use your HU to make adjustments. Start at 80 and slope 1 and go from there. That HU is awesome and if you play around enough with it you will be very happy with it.
