I got a 2000 dyna with a 103" 10.1 with 585 s&s cams 78cc screaming eagle heads and a MONSTER SUCKER AIR CLEANER for it. I just wanna be in the ball park so it's easier to tune any help would be appreciated. I'm excited to see what it can do my old cv is so maxed out lol
Mikuni's are jetted over-rich as a fail safe to preventing engine damage. The mixture screw is the opposite of CV-40's. Out is lean and in is rich. Use the 50 accelerator pump nozzle. Use the SMALLEST JETS . . . and they'll be too rich also. Tune, road test, jet change. Repeat as needed. Check plug color after each change. Got a HSR 42 (bye, bye EFI) on my 105" 2007 Dyna. INSTANT throttle response. Acceleration is awesome. I would give you my jet sizes but they are the Old Mikuni jets. The New Mikuni jets are the same as the CV-40.

the factory pilot will be good to run until you can tune it. I would think a 180-190 main would be gods plenty on your combo with a 45. Read the manual, it’ll explain how to determine all circuits
Here's some GREAT Mikuni tuning info. Search - Joe Minton - Eviol Tyrant. Back in the day, Joe Minton worked with Jerry Branch. Joe is the Wizzard in CV-40 and all Mikluni variants.

And the reason why they prevent engine damage is that most bikes have too much ignition timing..

yes that's the starting point so it starts and runs, then adjust as needed
