Some people like taller/shorter bars so they change them and sell them. Usually pretty inexpensive.
Burly has a complete kit with bars, cables and wire extensions, takes the guess work right out of everything for ya. Im leaning that way, but 2>4 made me take a look at the Bitwell and don't forget Road 6 Customs, they have 12" kits too, not sure if thats your style of bar.
Wiring was long enough for the 16" bars pictured. As far as cables and brakeline goes, here's my setup:

Barnett +8" SS throttle/idle cables
Barnett +6" SS clutch cable
Barnett 49" SS brake line (OEM length)
Mine are 14" Santee apes with 2" integrated riser on my 2008 Street bob. I am 6'0" and my hands sit just above shoulder height with the stock seat. They are awesome! Very easy to internally wire as they come with strings run through them and you just attach the wires with tape and slowly feed through! Did the whole install myself...
