I cruse around 3000 rpm. Engine is happy and get pretty good gas mileage.

A couple of observations from that owner's manual:
According the their charts, they approve having the bike in top gear at speeds as low as 40 mph.
They also say,
"The shifting points shown in the tables constitute a recommendation. Vehicle owners may determine that their own individual shifting patterns may differ than those stated and are additionally appropriate for individual riding styles."

So apparently, they not only give their blessing to very low rpm operation, but also imply that you can basically do whatever you want.

I like 3500 -4000
I have 30/70 pulleys setup, it runs higher RPM. Took a bit to get used to, but now this range feels very good. 3800 in 5 with 80mph.

Next mod - cams: Woods 555, they like this range too

this week pushed the revs up about 500rpm from there I'd been before changing gear (and being more diligent about changing down as well) - working well, she does seem happier, and I'm getting used to the new noises

I have no idea. My Harley does not have an RPM gauge.
