If you're getting a manual (which you should), spend the extra for the actual HD service manual. It's well worth it. I have the factory manual and a Haynes manual... The difference is significant. Some dealers sell them online at a discount (Boardtracker, Ronnie's, Outpost Alaska...), and you can sometimes find them on eBay.
From what I have read about the five bolts holding the rear pulley to the rear wheel are not re-usable due to mild "stretching" during the installation process of the pulley to the wheel. Maybe some one with more knowledge of these bolts will chime in. The oil changes question, the primary , engine and transmission have their own cavities for the fluids, nothing is shared.
OP- when you remove the pulley bolts, pay special attention to the shape and condition of the threads in the hub. If "oblong" then you'll have to dig deeper into this service. If the bolts screw in without any slop or play, then the hub should still be servicable.
Be forewarned: only use NEW bolts when torqing to the proper spec. I always do it in 3 or 4 passes, with threadlock. Use a "star" pattern like you'd use on a automotive wheel.
If your bike shudders when you pull in the clutch, the engine may be hitting the frame. If it has a cross-member under the crankcase, reach under there and see if there is clearance.

It’s an 03 and you said it had been sitting so you really need to go through the whole bike starting with the fluids including fork and brake fluid! Then move on to wear items like brakes, tires , etc.
next would be replacing the cam chain tensioner, if not done ...do them!
