Could be it has lost a little idle rpm over that time from wear and tear. Maybe needs a tune up?

The light is probably the only issue since a few lbs is ample for idle and your not having noise or other issues like lifters.

Bump the idle a tad with throttle till light goes off. Can you live with it idleing that fast?

Easy fix. Just pull the light bulb out of the oil light display on the dash.

For a quick diagnosis you can pull the oil pressure relief spring #13 in the diagram above and stretch it out a little and reinstall to see if the light goes out hot at Idle. It might even increase your off idle pressures but will not increase flow.
Also, it's very possible your idle is too low (950-1000 rpm is recommended). And use 20w-50 Dino oil.

You sure you got the gauge in the "right hole?"

(Don't laugh, it's happened before.)

Should be around 27PSI at full operating temp while cruising, and about 10-11PSI at idle (750RPM.)

750 rpm is too slow of an idle speed for an Evo. The factory service manual calls for an idle speed of 950-1050 rpm when the engine is at operating temperature.
