I load my bike up pretty heavy for weekend camping, to the point it is somewhat top heavy. Bike does quite well on the twisties, but the parking lot speeds can be tricky (slow speed turns).
Havn't noticed any problems on straights, and loooooong curves at 110 mph.
Personally I think you would be better to choose a Motherwell Rack and a soft bag that you like. My girl likes to ride so I have a Corbin Dual Tour saddle and a Nelson Riggs bag that fits nicely on the back seat when she isn't with me.
If you decide you really want a tour pack, I'd have to lean towards the leather wrapped look. I never really understood them on the SE Ultras, but it wold alleviate the color match issue. Not sure how difficult it would be to get someone to do a leather wrap on a fiberglass tour pack, but you might be able to find a tour pack cheap on ebay. Best of luck deciding, and post up pics if you decide to do it.
Corbin has a new style tourpak typetrunk that mounts to dynas or whatever according to thier website. Or you can go Euro and get a Givi trunk and find a mounting plate. Available for most bikes, in many sizes. I have a 46 liter removable trunk on my little Suzi V-Strom that is great for camping or commuting.
Futt Bugly no doubt, you guys are way too polite. I've been toying with the idea of a late-Sixties style tall sissy bar to drape a backpack over. That way I could go to the gym and leave my sweaty gear flying in the wind rather than funking up saddle bags or carrying a smelly backpack into the office with me. Haven't seen a lot of aftermarket tall sissy bars though, everyone seems to like the shorties these days.

I went with removable side plates mini backrest and lugggage rack also have a motherwell rack.
