The Fat Bob rides great, I love mine. Its my third harley and I intend on keeping this one in the stable even if I bring another harley home someday. As far as performance goes, if you are worried about what a bike does in the 1/4 mile stay with a metric. No disprespect intended.
I feel the same about my Fat Bob I want a Road King but I would not trade my Bob to get one. The same about the 1/4 mile to me it is not about numbers on a sheet it is about the experience of riding a HD. I have come from a background of fast street bikes and adventure bikes and I think you have to change your mind set to really appreciate what a HD is all about. That is not to say you can't hustle or go fast. I read an article where a journalist was on a small fast bike and met up with some big HD tourers, he thought he had better take it easy and not show them up on the bends, he said at the end he was just glad he could keep up!
From what I've been informed, cams will give you better torque (to get you moving quicker) and greater displacement will help in sustaining or increasing the speed you are trying to acheive. The cams will also help in roll on (no down shifting) passing of vehicles. That's my 2 cents.
