I've ordered all of my material from Zanotti's per the list on the first page of this thread. After I received all of the material, I'm shipping my new console to Joe for some wrinkle black powder. Before I install, I did have a few questions hoping someone could help out.
1. The order list doesn't have anything for a switch gasket. Does the WG dash already have a gromment for the switch?
2. I've ordered connectors to extend the existing harness per this thread: https://www.hdforums.com/forum/4835037-post1.html. When unplugging the fork ignition wiring in the neck, whats the easiest way to do this? Does the wiring get unplugged directly behind the switch or are there wires leading to a connector (if that makes sense). I've pulled the cover on the bottom of the backbone before and figured I would start looking for the connector there.

You just have to make the 3 wires on the ignition longer so they will reach the dash. You can use the stock plug on the switch as well. Worse part is just trying to get it unplugged from up in the neck.

I'm changing my tank to a WG tank. I'm mocking it up now. I was wondering the same thing you are. I have the parts book and I see no gasket. I asked the parts guys, they say there is none. There is a lot of space around the switch and dash. Water will be a problem. Rain or washing. I might have to make one if no gasket is used because the wiring could short out.

Those are my concerns as well. All of the installs that used the WG dash and HD ignition look clean and I didn't see anyone noting that a gromment/gasket was needed. I'm assuming something comes with the dash or ignition switch; or possibly nothing is necessary at all.
The ignition switch screws to the console and the opening is a close fit so I would not think you would get any more water in there than you would from the fit of the console its self. I have seen quite a few rusted up covers under the consoles that it seems water gets in there anyway.
