I'm not sure how tall you are, but on my setup 7" is too low. I'm in the process of looking for an OEM Electra Glide windshield so I can cut it up, paint it, and attach it for more coverage. As it sits now with the original 7" windshield (which I've raised about 1.25") the wind hits me right in the forehead.
But remember, my setup is using the Memphis Shades brackets (not sure what you've decided on using).
How I clip the fairing to the bike is by putting the bottom QD clamps right up against the underside of my lower triple tree. The reason I have it there is because this puts the best aesthetic space between the fairing and my headlight (yeah... I'm vain.... ).
So, what I'm saying is if you're comfortable setting the fairing up higher on the forks then the 7" might work for you. But I'm assuming you'll want the fairing to look as natural as possible, thus you're going to have the same concerns regarding fairing/headlight relationship.
I also bought the memphis shades, but from biker haven. They will sell you a complete unit and let you mix and match the brackets if you call them. I have a 2010 Fat bob. I ended up only using the mounts that go on the forks for mine. I bent up my own brackets fromt he fairing to the tube mounts out of 1/8" alum. $6 at a local metal supplier.

Baum any pictures of it mounted? WHich windshield did you go with since they dont make one for your bike?

The fairing looks good. Remember in the end you normally want the top of the shield to be level with somewhere between your upper lip and the tip of your nose. That should push the flow of oncoming air up over your head. Thats on a shield, not sure if the fiaring would change the flow of air or not, but I can't see how it would.
