Used to come as either mid or forward controls. I think '11 models only forward is standard. I love my mids for cornering and use highway pegs to stretch out when need to. I think you can get them as an option.
You can convert from forward to mids, but it's not cheap. Still, I may do it one day. Or may not.
I actually can do all I want to performance wise with forwards, and if I had mid controls I think I might think I had a sport bike and HURT myself sliding down the road sans bike one day. I KNOW that you can get more sure high speed handling with mids, but I don't need to do more high speed handling that I do with the forwards. But, even though I've been riding with the forwards for three years, sometimes it just doesn't feel "right" because I've been riding bikes since the late 'seventies on and off and never had forwards (or even highway pegs) before. It sure is nice to have my 34" inseam legs stretched out on the highway though!
Would love to see some pics of your bike. I haven't seen that pipe on a Fat Bob yet, but it sounds pretty cool!

I've got a stage 1 with V&H 2 into 1 pro pipes and a K&N filter, it gives me all the power I need even fully loaded with all my camping stuff, clothes and wifes stuff.
Congrats on the new Fat Bob! I've had mine for 3 years, and love it.
If it's still an option I would reconsider slip-ons with a big bore upgrade. Seems odd to spend all that $$ on the big bore kit, and go with slip-ons for the exhaust.

SideNote: I also plan on riding it up your way come June after my graduation from the University, I have family up in Williamstown, and Manahawken areas that I have not seen since I went back to school............So an East Coast road trip is in order.
Congrats on the Fat Bob It is a great bike. I have the Rush slip ons !.75 baffle size and wish I went with the 2,0 baffle size. The 1.75 sounds tinny at times and the 2.0 are more deeper. Good luck with it sounds like youll be hauling a$$ with the 103.
