3" extended forwards on my bike.....and left the mid pegs in place for longer ride options/comfort.....That and the 10" mini apes with 4" risers changed the feel from riding on the bike to riding in the bike......feels like sitting on a recliner now....sweet!!!
I put them on about six years ago. I like it there. Very comfortable and my knee no longer hits the AC.
One thing I don't like is the chrome cap on the mid shifter lever. I'm finely getting rid of it with my custom project. Alloy Art has a plug for the inner primary so you don't have to buy a new inner primary.
I got the plug at Dennis Kirk P/N 14-9662 Alloy Art P/N 1107-0073
FXDX rear wheel for sale in the dyna parts for sale section.
6'3" as well and I use 2" extended forwards and I reckon they are just right. On the open road I can rest my heels on the top of the pegs, mind you they never came with mids so I can't talk of their benefits.

I really hope that you didn't do the to a FXDX. Please say you have a regular Dyna.
I do have standard forwards on mine, not extended. At 6'3" they fit good. My knees have a lot of bend still. I don't feel like I gave up too much control. I contemplated the extensions, but didn't want to lose anything just to stretch a little more.
