save your money, the 90 series tire is going to look like a pizza cutter on the bike, run a Jiriah rim, lace to your stock hub using stock 19 spokes, all you need is a Tire, tube, wheel strip, and rim...
Would a 21" wheel from an 02' nightrain fit an 07' street bob?
Not a direct bolt on, the hub is different. As Joe said, you're better off lacing a different rim to your existing hub, which isn't hard to do.
But I disagree with Joe on the tire, I'm running a 90/90-21 and I think it looks awesome. To me the 120 looks too wide, but that's obviously personal preference. But you do need to buy different spokes to use the narrower rim, which adds about $100. If you're interested I did make a thread a while back on how to do it.
another point to bring up is that the 90 series will tuck completely under the fender and that is def a plus where as the 120 overhangs the stock fender a bit
