See, I was thinking that it would NOT work because you're still mounting the caliper to the same mounting points. So, your pads wouldn't be lining up on the rotor properly. This is purely an assumption as I have no experience or knowledge of a swap like that. Hopefully someone else can chime in that knows more because I'm also a little curious now...

Looks like the same caliper is used for both 11 1/2" and 300mm (11.8") rotors. Which makes sense since if you look up the Harley part numbers for calipers used in 2005 with 11.5 stock rotors and 2006 with 11.8 stock rotors they are the same number.
I am by no means an expert so don't go spending $800 before you confirm this though, lol. Im sure if you call Jaybrake they can confirm.
