Default Engine Temperature

So I've tried to do some research on this and have found a lot of different numbers. What is normal for a head temperature on a stock Dyna with a 103? I realize that temperatures differ from idle to riding at 65mph but what type of numbers should I be looking for? I have a 15 WG. What temps do the new 103s run the best at. I realize again there are a lot of variables that go along with this question but I'm just looking for general answers. I appreciate any help.

I've had mine climb well over 320, I think the most I've seen on my Power Vision was 360 in heavy traffic with outside temps over 100 before we found a place to park.
That was 15k ago and my bike still runs like a champ.
I've since put my PV in the saddle bag and don't pay attention to temps anymore.
BTW I'm in San Diego so frequent rides through high temp areas are the norm.
