Check out the runout number. Incredible for the mileage I have. When I lift the end of the pinion shaft to measure initial flex & play in crank bearings, the needle barely moves!
Todays update. I work slow, and my available free time changes daily.
1. Installed a pair of Torrington B-168 inner cam bearings.
2. Replaced the cam chain tensioner shoes with the Cyco ones. Swapping the tensioner pads was fairly simple. Having an 8mm bearing puller collet makes the swap simple.

By what I can see it looks as if the oil pressure started getting low. You can see the how the condition of the pinion shaft at the oil port looks good but outside that 1/4" path you can see scoring and a little heat build up which to me would indicate lack of good il pressure.
Unfortunately, there does seem to be a slight groove in the shaft. There also seems to be slight grooves in the original OEM cam plate. I won't be using the original OEM cam plate since I have the S&S version to use as my replacement. See attached pictures.
Are these slight grooves in the shaft a potential problem?
There have been a few times where I was caught in traffic on a very hot day when I noticed my oil pressure light flicker. I'd pull over to the side of the road, shut the bike down. Wait out the traffic jam while allowing the bike to cool down.
Seeing out your replacing the oil pump and the camp plate I wouldn't worry about it too much because of the increased volume of oil that S&S pump puts out. But I would take a thousand grit emery and just lightly buff the pinion shaft with water not dry..

I stopped by both Home Depot and Lowe's today looking for 1000 grit Emery Cloth Sandpaper. They didn't seem to have anything. Is Wetordry sandpaper similar? Can I use that instead? I have the below in my garage.
Had a similar tapping sound after installing An EV27 came, S&S lifters and adjustable push rods. After about 500 miles I adjusted the cam runout and the tapping stopped.
