well for one thing theres the special tools like this big circlip removal tool, i dont have it plus whatever gaskets and the labor to remove the whole exhaust? Its $90 hr. labor
Yeah man I'm very familiar with what it takes to change a clutch cable.
None of what you said above makes it a $250 job unless you are adding in the price of the cable and tranny fluid.

So far everything I've done to my bike (it's been a lot) when I did it for the first time I was intimidated as hell but once I was done I felt relieved about how easy it was.
It's up to you and how comfortable you are with tools in your hand.
So i took it to a buddy of mine that does work at $95 hr.
he charged $155 after tax and i gotta say because he let me see what it took, i dont think i could have done this in a day. I also didnt have the circlip tool. Anyway, im relieved to have it done now.
