Yup, Only reason the manual suggests straights in the summer is lifters and valve train. They can say 20-50 is the same but the engine does rattle less when hot with straight 50 or 60.
Yeah in the Summer I would use straight 60 in the Shovel.. Seeing that the Evo is built I might try straight 60 in the summer in that as well.. Although I ordered a Six pack of VR1 from Amazon.. $26.00..... Can't beat that..
Twin Power brand oil sold through JP cycles has a 25-60 weight. Thicker oil for hot weather and you still have the benefits of multi-viscosity that EVOs call for.
In Shovelheads down here in FLA I run 50w mixed with a little 60w in the colder months and 60w with one qt of 70w in the hot months. In the Evo I run straight 50w all year around.

Another fan of syn here, using syn on a Evo for years and no problems, no leaks, it will last longer before a rebuild, there is so much myth in america with dyno oils, they are just cheaper.
