nope, bought the bike built and proceeded to get on it and beat the hell out of it.

Agreed it is your bike, just make sure the fuel reserve works..
As for how to remove, well that's subjective to who's doing it...You gonna remove the headlight bucket also...???

fuel gauge is on the tank, tach gauge is tach only

You mean you couldn't find a YouTube video explaining how to do it ? Blasphemy !!

This is funny because I spent 3 days at the shop sorting through a spaghetti mess of wires after we mounted a RT fairing on a shovelhead that had been hacked up by the previous owner and we were expected to figure it out and make everything work.

Post up some pics of your project.

I have yet to find one freaking thing on my EVO that is made of tin but mine is a 93.
I bought a first year EVO new in 1984 and could be mistaken but I'm pretty sure it didn't have any tin on it either.

That said, I agree with the take them off and hide the wires.
I wouldn't trash them though.
There are plenty of boomer purists that will pay a decent price for those OEM gauges.
Maybe even enough to cover the cost of getting rid of the tin on your ride and replacing it with some sheet metal.

Follow the wires back to the next connector and disconnect. This may be under the tank, in the headlight bucket or in the frame back bone. If you have to de-pin the connector to remove, that is the move. This will be the cleanest and most reversible option. I would take pictures before I took it apart in case you decide to put in back 10 years from now. Speedometer cable can be removed as well. Good luck, and yes pictures would help.

Don't be a hack and cut the **** out of everything, you will be haunted by the next Owner when he is cursing the guy the destroyed the wiring harness. Or maybe not, just don't be that guy if you do not have to be. Good luck.

Remove the gauges and cap off the wires. Label them, tie them up and tuck them under the tank somewhere in case you ever want to use them again. Now here's what I did.
I ripped all the wiring out of my 77 FXS, removed all gauges, switches and unnecessary lights and rewired the bike for headlight, tail light and ignition.
Here's what I started with -



and here's what I ended up with -
