They could ride it as far as the starter brings them until the battery dies. Unless you bypassed the key for the coil wiring.

Only if there is power to the ignition system. Used to be a thing in the old days to put a hidden switch on the low tension side of the coil so no spark.

That big red wire going to the starter motor is one side of the solenoid so when you push the button the circuit is completed and the motor runs.

The problem you found though is there is no safety if the bike is in gear.
