I have the EVL-3010 on Bertha. It's supposed to be for more low-end and mid-range power. It pulls very strong - but I have found that it likes some revs, and Bertha will knock under 3000 revs at more than 1/4 throttle. I have the advance dialed to the minimum on the Twin-Tec ignition, too. I haven't been able to figure out why she knocks so badly at low revs with this cam - even on 93 octane gas. I don't think it's normal...
The EVL-3020 has about 8 degrees more duration, and would be happiest at higher revs - 3500 and up. It's for more mid-range and upper-end power. Either of these would be good for a Fat Boy, depending on your riding style, and how fast you like to rev your engine.
If you like to lug your engine, then you might even consider an EVL-3000 - which is made for heavy baggers, two-up riding, or towing a trailer. It's made for a lot of low-end power on heavy bikes.
