If I was to leave everything else stock. By changing out my cams only. Could I increase my horse power? Is this a feat to be tried by a lay person or only someone with complete technical knowledge?

Also use the search function,there are PLENTY of great cam upgrade threads you could learn a lot from. Particularly Fuelmoto's thread in the bagger section testing out the new Woods 555 cams in a stock top end. a/c and a gopod pipe is a must of course.
Like I've read here many times: " Consider your engine a big air pump. Non EPA cams get more air in and more air out". Your stock intake/exhaust restricts what comes in/out. Just cams will help but not at what they're really capable of..

I would tackle this myself but worry about the bearings...and the pushrods...
What do you think about Andrews TW26A cams..are they a bit milder than Woods 6 or 555?
I would go with Woods.
As far as mild goes I have a Woods 400 -6 in my 08 fatboy. No real problem. Noise?? Go with Woods Lifters takes care of this issue.
Something seems wrong with my rear tires though.
Big engine can take a big cam and do a good job. Not be peaky.
I would think about the Woods 9b with the Woods Lifters. Or a little easier, the Woods 408 with the same lifters.
His springs also.
The 408 I bet would really do the job.
