if you were to do 3 then which starter would you use??

Always start the bike with a closed throttle. Opening the throttle will fill the cylinders & increase the load on the starter.

The SE-255 closes valves very early in the cycle. That means there's a big volume of air/fuel mixture in the cylinder to compress while starting, especially with a 103. This results in very high pressures on the upstroke. The starter struggles excessively to turn the engine over. The coils over heat. You get kickback. Result is, damage to the starter. Once you relieve that pressure with CR's, a stock HD starter will work fine.

What he said. I had the same issue and bought a set of SE MVA heads. Problem solved.
