I'm in the market for a windshield. I kind understand the the different pro's and con's of polycarbonate vs. acrylic. My question is what type of plastic do most of you look for when buying a windshield?

I like the windshields made by Memphis Shades. Theyre made of some sort of hardened acrylic. I switched to them after I had cracking problems at the screw holes with four HD polycarbonate windshields in a row.
Im sure someone will chime in here saying that polycarbonate is more shatter resistant and therefore safer than acrylic. I can say that during my accident I hit the windshield hard enough to tear the acrylic Memphis Shades windshield completely off the bike but it didnt break. Thats good enough for me.
I also like that theyre available in half color tint.
I bought a factory shield-height Klock Werks Billboard Flare last weekend, and its an interesting upgrade. The wind buffeting my 3/4 helmet at highway speeds is reduced compared to the old shield, but Im not getting the bubble of still air mentioned elsewhere. The front end does feel a bit more planted at 70+MPH, though, so maybe there is something to the downforce claim that Klock Werks makes, after all.
I have two Freedom Shields for my bike. Short tinted that I can see over and clear taller that I can look through. 90% of the time I ride with the short tinted, but if I'm going to be out touring for long periods I will put the taller clear touring shield on it. Great company and top notch customer service. They are behind a number of weeks though from ordering to shipment.
I bought a windshield from long ride shields (LRS). Love it.

I've had several from Long Ride Shields. We have 2 of their detachables now. I like the recurve at the top and I've always had positive experiences with LRS staff.
