Default Rewiring Chopper/Bobber

I am finishing up project hardtail, not a rocket scientist when it comes to wiring I can follow an existing facotry wiring schematic but don't know the do's and don'ts starting from scratch. Before I started it had the basic head lamp, tail lamp, & signal lamp. The wiring had only one 30 amp circuit breaker at the pos take off from batt. one flasher for signals. No fuses or fusable links, I added a dash & speedo, LED Sig lamps both front & rear, & rear LED Running/Brake lamp. Do I need additional fuses for each circuit or additional circuit breaker? What is actual purpose of a circuit breaker? If so What amperage and Where in what circuit?
