well, since there are many variables, I'd say 'average' ~230 ish is an all around good temp..never used a gauge and run conventional oil in my 107 with fan assisted oil cooler so never think or worry about it

Pretty much this. I do have a temp dipstick, but this summer will be my first with a M8. But TBH I had a hard time getting it above 212 in the northeast winter, which is where you want it to be (temp, not northeast location:-) to to boil out condensation from the combustion process. Had similar temps with my twin cams, so Id have to say (with no actual hot weather experience yet) that the temps run similar.
