I don't know about the OP, but my FLHXS's neutral can be fiddly to find on a cold start. Warm startups are a lot easier. I prefer to start in neutral since I'm not usually sitting on the bike during warm-up - I'm gearing up.
This one is a new toy, more buttons, more power, and therefore more tempting to play with, lol. I do have the patience to wait out winter, if I scrape it all together and check my sock drawer😀.
I have read a lot of posts, not all which agree with each other, and so have been checking my bike for signs of issues- this one being the clutch switch.
I appreciate all the knowledge on this site, and am constantly learning things I did not know.

Start it in neutral . If it does it there you need a clutch adjustment.
If it does it in neutral, hes got much bigger issues as neutral totally disconnects the drive train. Also, in an 18 Ultra, there is no clutch adjustment.
The reason the bike jumped is that the transmission oil is likely cold and thick preventing normal clutch slippage. Even if you had tranny-to-primary fluid migration (which was cured and the cure was built into the 2019's) that would not cause what you described.
Not all 19's have the vent installed, I believe they started installing the vent at the factory in May. Even though it is normal for the bike to lurch ahead a little on a cold start the oil transfer issue will make it worse. My 19 Limited was build in 4/19 and did not have the vent installed at the factory. The bike had very little to no clunk when I shifted into first gear when cold. When enough oil transferred it would bang into gear worse than my twin cam did. Once the oil levels were adjusted it would shift just like it was new. I experience this 3 times before I was able to convince the dealer to install the vent kit.
I would also re-iterate it is not a good habit to start the bike while it is in gear when possible but it is good to test the safety switch regularly.

I have it parked, and havent yet taken it on a distance ride.
The only real concern I have is the possibility of transfer. I have read that there are a few signs, such as clunking into first gear, and will certainly pay attention to that, I did experience a harder sounding shifting, and difficulty finding neutral while it was warm.
I also believe that the vent kit is a warranty item, without waiting. Is this correct?

You said it was cold. By that I assume you mean Cold weather. If so Try this pull the clutch in several times before you start it see it it tries to jump forward. Start the bike allow it to warm up then try it . When it is cold the lube in primary is thick it has a big effect on the clutch.

Also, remove the derby cover. If oil runs out on your shoe, its overfilled, which adds to clutch plates sticking. Proper level it to bottom of clutch basket. If it does it again, you might have migration.
