I am sure I'm in the minority but here goes... I had a stage III installed in 2017 prior to delivery, the cam caused a weird comp noise from its lumpiness. I actually asked the tech, " whats that noise" when I first heard my new bike. So I had a second M8 with an aftermarket stage II and yes it made the same choppy compensator noise that I really dislike but accepted it as another M8 quirk.. I own a Pan and Shovel too, and love the sound those engines produce, My new 2020 M8 is staying with its stock cam because I truly dislike the way the M8 sounds when cammed up.
Interesting... I just got a quote for getting a CAM in my bike, but reading your post makes me wonder if I should see if I can hear a couple bikes first in real life. (not YouTube)

I’ve had 2 bikes with the SE TQ cam, stage 2. They ran well for a compliment set up but didn’t have the same sound as aftermarket.
And this... This is what was recommend to me and review from someone that actually has one is saying the sound is OK... I'm not after $2000 "ok"
OP... It's hard to judge the sound of something over YouTube... especially exhaust, audio, etc... Also advice on sound from others is so subjective. If you can go to some event by you that has people with upgrades you are looking to get. Nothing beats that.
