I have a bone stock 2018 flhtcu M8. When it warms up to operating temp it sounds like it’s losing a cylinder and idling on 1 cylinder. Turn the throttle and it comes to life and Runs and drive normally .
What am I missing here ?

Read about EITMS in your Owners Manual..therein will lie the answer to your question
LOL, Many of use remember the first time we heard that... Was an unnerving surprise and the first time ever I was ashamed of how my Harley sounded.
OP search EITMS in your Owners Manual and yes you can turn that off so you never hear it again...
Out of curiosity how are you getting your bike hot enough so quick to activate EITMS?
Because I have to like be stuck in stop and go traffic, or dead crawl lane splitting for a few miles to get it to come on normally.
Oh it will come on riding twisties as well.
It shouldnt come on when the bike is just hot. It needs to meet a pretty high temp for that.
I have noticed with my new 2023 as I have a rout I travel normally that takes me high speed 75 mph +/- then right off the highway into heavy traffic and traffic lights, that mix of high speed and then stopped at stop lights It would activate.
I had no real reference of what normal and whats not. I have the optional oil cooler fan and catless and no issue from engine heat on my rear so I turned it off.
My oil temps are 175 to 203+/-, I can't live with then sound of a single cylinder.

It will also activate if the ambient temp is over 90 degrees. When I leave work when it’s over 90 degrees mine activates at the first stop light after only about a mile at 35-45 mph.
The service manual says it activates when all of the following are true:
Ambient temperature <OR> engine temperature exceeds temperature threshold.
