If you come in May, bring some warm and good rain gear. It can be very wet on the coast in May. Just depends on the year. We're starting this winter very dry, so we can expect a wet spring never know though. The big advantage in May is there won't be to much heavy 101 traffic yet. Sounds like a great trip.

Some passes over the Sierras from Hwy 395 don’t open until June. Unless Hwys 50 & 80. If you are planning to enter CA that area. Otherwise May or Sept for the rest of CA.
PCH has less fog in Sept. But Central Valley can still be hot in early Sept.
CA tourist season is Memorial Day to Labor Day. I recommend after Labor Day.
