When we have gone to Jackson, we have stayed out of town, in Alpine, WY at the Bull Moose Lodge and Saloon. It's about 35 miles south of Jackson, riding along the Snake River. Gorgeous ride. Alpine sits beside Palisades Reservoir, right on the Idaho/Wyoming border.
Caveat -- I'm not a "night life" kind of guy. If you want to be part of what goes on in Jackson after dark, then you should probably stay in town.

I hit the Beartooth and Chief Joseph highways pretty much every time I head south. I may even like Chief Joseph better, but they are both great. Keep an eye on the road conditions before you set out no matter what time of the year. It can still get quite nasty even in the middle of summer. I had to bypass them last year on my trip to Colorado late last June due to a road closure from snow.
I highly recommend the Tetons as well. Highway 22 West out of Jackson to Victor ID is a hidden gem of a ride too.
Edit: Oh, be sure to ride through the Bighorn National Forest on your way to Yellowstone from Rapid City. Both routes are good. The historic Occidental Hotel in Buffalo is a must see. I didn't stay there but the lunch was great.

Yes, I also have an external power supply for my batteries but the cold just freezes them somewhat, weird and frustrating. Also the OP should know that using the wifi settings with a remote will really eat up a battery not being externally charged...

My brother and I have been to the home of yogi and boo boo a few times and you never get tired of Yellowstone. I would come in from the south end and do the grand Tetons, fantastic scenic view. If you have time go out the east end through the red canyon into Cody Wyoming and take in the oldest rodeo in the USA and if your into firearms, the best gun museum in the country is there. Enjoy the ride and be safe.

Big thing now is finding a place in Rapid City I can ship my bike to and then out back to Florida.
