Now that I have the states established, what would be some places along the wayworth stopping to see?

If your plans include Arkansas, you shoulddefinitely spend a few extradays there. There is some awesome riding in the Ozark region (NW section of the state) that you will NOT want to miss. Here is a fantastic site dedicated to riding the Ozarks - http://www.cruisetheozarks.com/

Bryce Canyon National Park ...
Zion National Park (also about 30 minutes from my house) ...

For what it's worth, I've done a couple cross-country treks on motorcycle and they can be very rewarding. Of course there is also that little canyon south of me (The Grand one) as well as Las Vegas, Lost Angels, and the rest of the west coast.
For my money, I'd say come west through Tennessee and Arkansas. Hook-up with Route 66 (or what's left of it) either in Tulsa or Oklahoma City. If you like cowboy stuff then hit the Cowboy Hall of fame while in OKC. Then come out I-40 to Albuquerque, New Mexico and then head north on I-25 to Santa Fe.
From Santa Fe head toward southern Colorado. Hit Durango before coming back to the Four Corners area. Then north again into southern Utah where you'll hit some GREAT national parks. Once you finish with Bryce (and you got to ride Highway 12) then come over Utah 14 from US 89 to Cedar City. Head then to Las Vegas then to L.A.
For the return trip, if your back will hold up to the ride, then head north to San Francisco before coming back east through Reno, Salt Lake, and back into Wyoming.
Two weeks can cover a lot of ground, even with short riding days.
You'll have a tough time finding better riding than in the rocky mountains. Millions of acres, thousands of miles of roadway. Border to border. The hard part is figuring out how much you can cram into only 2 weeks!
The only dull spot in your plan is getting across the middle of the US. Pretty easy riding, but pretty dulll and often wet, too. especially in early summer. Ever driven through KS? or OK? Yawn.
Here's what I would do (and have done). Be carefull, I'm about to use a dirty word - trailer! Oops, there, I said it
Rent a U-haul, hook it to your car/truck. Tow the bike out to a central point, like Denver, or Laramie, or Albuquerque. Park the truck, and make a big circle for 10 days. Then get another trailer and come home. See the best the continental US has to offer. Then arrive home rested and relaxed.
