It is legal to camp at a Kansas rest stop for one night. Most are setup with an area behind the bathrooms to setup tents and have picnic tables and a place for a fire. I do not know how safe it is, but I'd probably do it.
A part of that pages says: "One nite camping is allowed at Kansas rest areas. They have a separate loop to enter from the rest area parking. This loop is paved, has picnic tables with shelters, a dump station, and a freeze fount for water"

I did 3 nights in a Hennessy Hammock in Europe. I'm not going back to a tent for just myself. Packs easily, sets up easily, and is waaaayyy more comfy.
