Taos

Do you have time to swing up into Colorado? (Taos is only about 45 miles from the Co-Nm border)....though it would make a longer day, a trip up to Colorado City / Hwy 165 and the Bishop's Castle would be a nice one-day ride. You can swing NW and have a great lunch in Westcliffe before heading back south to Walsenburg - La Veta Pass - Fort Garland (great museum there along the road!) and then south back to Taos. If you elect to do this I would come north on Hwy 159 into Colorado rather than through Cimarron. That way just seems to be a slower drive.
Bishops Castle:

If you are into visiting religious sites the Stations of the Cross in San Luis is another nice place to stop:

This is how your day would be: Leave Taos at 7AM...north to San Luis (8AM)...Stations of Cross (leaving there at 9AM)...16 more miles to Fort Garland (leaving there at 1030AM...travel east on Hwy 160 and north on I-25 to Colorado City (Lunching at Obies at the intersection of the I and Hwy 165)...Travel west to Bishops Castle (leaving there at 2PM)...travel north and west to Westcliffe (leaving Westcliffe at 5PM)...back to Taos...arriving about 8PM. Long day, but you'll see some incredible places and beautiful Colorado high country.

I would also suggest the great people and the yummy burgers up at Eagle Nest Lake. Great mountian ride to a Quaint little mountian town and this is the off season. http://www.eaglenest.org/
Have a great safe time,
Peace
