I guess I know the answer to this question but I will ask anyways? Is there any way to connect my phone to Apple Car play on the CVO without the use of a headset?

Chris, I never found one for my 2021 cvo limited and I looked hard and even bought a couple of gadgets that supposedly worked with WHIM. One of my buddies hasnt been able to figure it out for his 2022 cvo roadglide either. 2020 models or earlier have solutions I believe, 2021 or later with the whim factory module and the Harley gts radio, you just have to have the wireless headset connected for car play to activate.
I have a 21 Roadglide CVO. I connect via bluetooth, the system prompts to ask if I want to use CarPlay. Then use speaker selection to choose speakers or headset. I don't remember how I did it the first time as it was 2 years ago and fumbled into it with some help from the parts guy at the local shop.

I dont think Harley supports wireless car play even with a headset connected. Do you use a wireless headset?
Well,
I have finally decided to Bluetooth my 30K Harley Sena to the factory radio, turn off the Bluetooth on my phone, connect to USB port on the bike and I have Apple Car Play. I just will put the Sena in my saddlebag without all the headset attachments on it. Seems to work! Now I can run my Waze or Google maps without having to ride with a headset for now! Just wanted to share!

yes, thats how Harley designed it to work. Connect a headset and then plug in your iPhone to the usb connector to get CarPlay.
Right! But I didn't want to wear a headset and have Waze or Google maps.
Thats the advantage of having a wired headset. On my 2022 RGL, I changed the console to the smooth RG Custom console, moved the wired port under the seat and plugged in an adapter that mimics a headset and voila, I have carplay at startup!
