With your PV you'll be able to see what tune is in your ECM now. You can then change the tune each time you change a component..... get a stage I , flash a stage I tune... add a cam, flash a tune for that cam, etc....
Go easy with the cam.... many people over cam. Figure out where you ride most (rpm range) and then decide what you want from the cam. There are many bolt in cams, that will wake up that bike without needing springs, headwork, pistons.... Of course, if you are a high RPM/ big power junky.... that's nice too.... Anything other than just cams, and you might want to contact one of the sponsoring vendors and a get a package with components that compliment each other...
Modding these engines is easy, it's fun, and they can run quite well..... AND it can be a sickness...

Take your time, do your research, and enjoy the experience....
FWIW:
I have an '03 Heritage and modded it at 6 months old- w/ SE air cleaner/ SE 95" big bore kit/ SE 203 cams / V&H big shot exhaust/ eventually replaced the HD download with a Power vision tune.... it runs really well!
I need to change the tensioners soon and I'll be going to Andrews 26N conversion cams w/'07+ cam plate, and switching to a 2-into-1 exhaust (for a change), and a power vision tune

To determine if there was a modification made to the ECM, how would I go about comparing the installed MAP to the stock MAP?
You can download the tune into WinPv and there is a section "tune info", which should let you know....
