The Harley catalog has separate charts for touring M8s and Softail M8s, and on the touring M8 it definitely lists it as using the high flow exhaust for Stage IV. But for the Softails, it shows the chart results as having been obtained with Street Cannons.
I think that even though the peak numbers are only a little higher with your build, the quality of power looks infinitely better with yours. I specifically chose not to get Stage IV because of the lousy torque curve, it shows even less torque down low than a stock bike does. Your cam and tune change that dramatically, resulting in what looks like a pretty much perfect combination of strong usable torque and good high-RPM horsepower.
Strong torque is the most important factor to me, and I would sacrifice ultimate HP to get that torque. Your build shows that we may not have to sacrifice, and the stock exhaust header is capable of supporting ~125 HP and ~130 tq.
How much of that is due to the cam and tune, and how much to the SE parts? Have you done a Fat Bob 114 with Street Cannons and just the TTS200?
I had to go look at which catalog I had and of course it was a '17 SE catalog, sorry for the misleading info on that. Even if we look at the Softail Torque curve it's still not in the ballpark with what the 200 cam does. As for one tune to another I cannot answer for sure as the WOT curve that gets shown on a dyno is completely out of any emissions testing range so I would guess they have done the best they can in those areas. The 515 is less than stock until is see's 3600 RPM and there it's about even. The 200 cam is why the torque is so much stronger as the HD Stage IV build and this one are pretty much the same thing other than the camshaft and the piston supplier.
The SE 498, SE 515, TTS 200 or TTS 250 cams will NOT bolt in to a Stock 107, 114, 117 from HD. You will get piston to valve contact and break the valve springs. They all require replacement valve springs and additional piston to valve clearance. If you want to drop to bolt in, then your looking at the SE 447, SE 462, TTS 100 or TTS 150 cams.

Thanks for the informative and detailed response! I didn't know the TTS200 required the additional components, but now that you have explained it, it makes sense.
I will take another look at the TTS150 then.
Have you had a chance to run the 150 in an otherwise stock 114 Softail with Street Cannons?
