I’m thinking of buying a new Heritage and have no want or need for speed or stage this or stage that. Is there any reason I shouldn’t buy the 107 when I can save a considerable amount of $ vs the 114

Depends on what you're after, and whether you are concerned about resale value. You'd probably get the additonal $ back if you eventually sold the bike, with all other things being equal. I think on mine it was only $1300 difference, most of which I bargained off while making the deal.
I've not heard or read about any drastic difference in power between the two, but we sometimes have a tendency to want more after we've gotten accustomed to whatever it is that we have, regardless of how much power we start with.
I do believe you could be happy with either, both have plenty of grunt.
